This Is Getting To Be A Habit…..

It was another long weekend for Southridgians and I for one am pooped!!! This was the third Thursday in a row that Southridge was represented at the Oasis for karaoke. We always have such a blast at our favorite tavern, but it’s so difficult to get all of the shy and reserved residents of Southridge to put themselves on display. This week we were treated to many classics, like Jeff & Tim’s vocal of “Wanted Dead or Alive” by Bon Jovi. Other classics included the Dixie Chick’s “Wide Open Spaces” and of course, “Goodbye Earl.” I know I don’t need to tell you what Jeff’s signature song is, but there was something different about him singing it this time. He actually got tipped by two women. He made $1.25 for his talent. Hey! Maybe I should start renting him out for parties!! Jeff & I decided to try a duet and not screw it up. After searching Harvey’s book for about an hour, we picked “Picture” by Sheryl Crow and Kid Rock. I must say, I was quite good, Jeff needs work. The highlight of the evening was an impressive version of “Man of Constant Sorrow” sung by the guys. We even had some authentic hillbilly dancing going on. I wish I had my video camera, it was incredible. I really look forward to seeing them perform it again.

On Saturday, Southridge was treated to a visit from Keith, Amy, Bubba, Laura, and their gang. They weren’t here very long though. Soon after they arrived, we headed for Concan. After a 5 hour drive (only supposed to take about two) we all finally got to the river and set up a base camp. (Which also took us an hour cause we can’t leave Southridge without 10 ice chests and 45 chairs) The Frio River is my favorite river in Texas and the water was fabulous! It was so nice to just lounge in my floatie with my trusted paddle in hand. You know, normally we don’t think of anyone as being really weird, we have an imaginary criminal that stalks our neighborhood and a blog to tell people about him. However, I’m pretty sure we met some of the guys from the movie “Deliverance.” Psychos!!!! Why is it every time I floated by Teresa the water got warmer?

Juan & Sonya were nice enough to start dinner since they had forgone the trip to Concan. Juan’s meat was great and Sonya’s rice and beans were magnificent! Yummy yummy to my tummy, thanks yall. I want to thank everyone for their compliments on my shrimp enchilada casserole. I’m really happy you liked it. I had a few people ask for the recipe so I’m going to post it at the end.

Club Carpenter was really hopping Saturday night. There were games, fun in the pool & hot tub, and even some dance lessons. Rhythm, you either have it or you don’t. Thanks Tim & Terri, we had a great time as usual.







Only two weeks till Chalk Bluff Southridgians!!! It’s going to be a blast and I can’t wait!! Hope to see you there and hope everyone has a great week.




Seafood Enchilada Casserole

Ingredients
1 ½ tbsp minced garlic
2 tbsp olive oil
Salt & pepper
2 lbs peeled & deveined shrimp, cut in half
Three green onions, diced
15 mushrooms, diced
12 oz sour cream
3 c. shredded Monterey Jack cheese
1 med avocado, thinly sliced
Flour Tortillas

Sauté garlic, olive oil, and dash of salt and pepper over medium heat for five minutes. Add shrimp to garlic mixture and stir fry for about five more minutes. Add green onions and mushrooms, sauté for another five minutes. Add Monterey Jack and sour cream, turn heat to low.

Place into glass casserole dish and line top with sliced avocado. Place in oven at 350 for 10 minutes. Allow to cool before serving with tortillas.

* Next time I’m going to try making as a regular enchilada dish by placing the shrimp mixture into corn tortillas, then putting the sauce and avocado on top.

It was a great weekend. As usuall I have to come back to work to get a fricken break. We were glad to get to spend some time with the Corpus crew at the river. I say we need to stop in each town twice when we go to Chalk Bluff! LOL!!!!

okay jeff--i think the reason that you didn't get any votes for the poll this time is because we've seen you on there so much, it was just a nice change to see a few others on there! but we all still love ya and can't wait to see you on it again... think it'll transport to chalk bluff??!!
